Parcels

There's nothing better than receiving parcels, especially if you have been waiting a long time to receive them! Today I got a new workout outfit from H&M in the hope it would launch the New Year off properly and inspire great new workouts. New clothes can do that you know! :)

I got a pair of capri trousers, a sports bra and a long sleeve cool-down top. All lovely except the sports bra which was a little tight as it was an XS.

Staying with the theme of parcels, I also tried a new recipe today that I had ripped out of a newspaper some many months ago. I have always been intrigued by cooking fish in parcels so today I just went for it!

They were much simpler to make than I thought and the end result was pretty amazing. My Boyfriend said he would have been happy to eat it at a restaurant and requested it again a couple of days later (the bottom picture is from the second time I made it).

Preheat oven 200 C
cut a potato in slices and boil in salted water for 15 mins
throw in any large veg you are using in the last minutes to parboil (like asparagus)
make two 30cm x 50cm parcels
spread a little low fat spread or butter in the middle and arrange the potatoes on top
add green veg like courgette, broccoli, green beans and spring onions
place the salmon on top, season and add lemon juice, salt and pepper

close up the parcels leaving enough room at the top for the heat to circulate

Bake for 15 min
